Frenchies Food Diary #13

It’s starting to feel a lot like summer out there – and I don’t know if you’re anything like me, but in summer, salads are literally all I want!!TBH, if I could eat salads all year round that would make me very happy, but in winter, there’s nothing nicer than a nice warm lunch and a miserable day.

 

But whether you’re like me or not, I’m still here to help you out with your weeks meal prep. So while it might look like I’m not eating as I said I would in my blog posts, it’s only because I’m perfectly happy with my salads 😊

 

 

Breakfast:

 

While I enjoyed the look of last week’s breakfasts, the peppers didn’t sit right in my stomach, so going to change it up again this week.

I believe that breakfasts should be whatever you want it to be, because it’s the first meal of the day. So important you start the day with a smile 😊

 

I’m going with scrambled eggs again. I add some curry powder to mine to add some tastiness.

I’m adoring Smoked Salmon at the moment, so I top 2 Rice Cakes with ½ a Laughing Cow each. Or toss it into the eggs and make an omelette.
It’s quick, easy and super tasty.

 

Snack:

 

Also changing my snacks up this week.

Thinking perhaps Carrot and Celery Sticks with some Hummus and Chive Cottage Cheese. Something fresh and tasty J but if I miss my PB too much, then I wont be long going back to it.

 

Lunch:

 

Garlic Chicken with Mixed Greens

 

As I mentioned, keeping it very simple this week. No reason in particular, just craving those greens and salad.

Going to pair the Chicken with a Spinach, Broccoli, Pea and Radish Salad 😊

 

Chicken could not be simpler to make. All you need is:

 

– 4-5 Chicken Breasts

– Garlic Seasoning

– Onion Seasoning

– Frylight 0% Oil

 

 

1. Dice the chicken into small pieces.

2. Fry the pan with oil.

3. Fry the Chicken until browned

4. Season with Garlic and Onion Seasoning.

 

 

To make the Broccoli more salad like, undercook it slightly so that it’s crunchy and cut it into small pieces.

 

Dinner:

 

Perhaps I’m a creature of habit, but I really enjoyed my turkey lettuce wraps last week, so going with the same dinners this week J in case you missed it I’ve reposted it below.

 

Spicy Turkey Mince Lettuce Boats

 

Ingredients:

• 1 x Tablespoon Coconut Oil

• 600g Turkey Mince

• 1 x Onion

• 2 x teaspoons Garlic

• 3 x Chillies

• 2 x teaspoons Curry Powder

• Soy Sauce

• Honey

 

1. Heat a large pan with your coconut oil.

2. Dice onion and fry until browned

3. Add garlic

4. Add turkey mince

5. Chop chillies and add to mix

6. Add Curry Powder, Soy Sauce and Honey to taste.

 

Serve in Lettuce Gem Leaves alongside cucumber, green beans, cherry tomatoes, baby corn and beetroot 😊

 

Bed-time Snack:

 

Keeping my bed-time snack, same as before – creature of habit and all that.

 

– 150g Cottage Cheese/Greek Yogurt

– 30g Frozen Blueberries

– 30g Frozen Raspberries

– 10g Honey

– 20g Crushed Nuts

– Sprinkle of Coconut Flakes
